Creamed Peas, Carrots and Potatoes
A modern version of an OldTime Favorite
In a microwavable dish combine 1 cup frozen petite peas and 1 cup frozen diced carrots. Cover tightly with plastic wrap and microwave 2 minutes. Stir and microwave an additional minute, or until well steamed. Careful! The steam is very hot.
Drain all liquid then set aside.
If you prefer to use fresh vegetables, increase the cooking time by one minute.
Prepare 8 servings of Potatoes Gratin following the Stove Top directions on the package.
During the last 10 minutes of cooking time, stir in the cooked carrots and peas, making sure all excess liquid has been drained.
Stir well, cover and continue cooking at
a low boil for the remaining 10 minutes.
Stir occasionally. Salt and pepper to taste.
Cheesy, Sour Cream
Potatoes: An easy way to dress
up this side dish by just adding a dollop
of sour cream and a sprinkling of chopped
chives. You'll be suprised at the
little zip this adds to this already
yummy side dish.
Potatoes Gratin
a la Weiners: Simply slice some
of your favorite "hot dogs" and
toss into the already prepared potatoes
gratin. You might also want to try frying
some Hillshire Farm sausage with onions
and adding to your potatoes. This is
an easy dish your kids and family
are sure to gobble up!
Chicken/ Potatoes
Gratin Casserole: Prepare potatoes
according to oven directions and amount
of servings desired. Pre-cook
2 skinless
chicken breasts and chop into bite-sized
chunks. Set aside (do not overcook).
Cook fresh or frozen broccoli, about
two cups (cooked). Sautee about a quater
of an onion with a tablespoon of butter.
Combine chicken, broccoli and onions
Stir into
the already cooked potatoes and place
in a 9 x 11 casserole dish. Garnish with
grated cheddar cheese. Cook for another
15 minutes.
Salt and Pepper to taste. Get
your taste buds ready, you're going to
love it.
Shepherds Pie: Prepare
potatoes according to directions and amount
of servings desired. In a medium skillet
brown one pound of ground sirloin.
When browned, remove meat
and set aside. In the same skillet, sautee
1 medium onion, add a can of drained,
cut green beans and the browned sirloin.
Pour in
one 6 ounce can of tomato sauce. Add a
dash of sugar, salt and pepper to taste,
and
cook until it comes to a boil. Pour meat
mixture into a large casserole dish and
top with the potato gratin mixture. Grate
at least a cup or more of cheddar cheese
and
sprinkle
over the top. Cook in a preheated
350 degree oven for about 30 minutes.
Get ready to dig into a hearty, healthy
meal that will satisfy everyone's appetite!
Make enough, because your family will surely
